Chicken and Rice Hotdish - Mary Correll (although this hot dish was often served at various relatives get togethers)
Brown Chicken - bone in or boneless chicken parts, or chicken breasts all work (TIP - try deboned chicken thighs to retain maximum moisture)
Mix: 1 cup Minute Rice, 1 can Cream of Chicken soup, use soup can for 1 1/4 can of milk and 1 envelope of onion soup mix (TIP - double this rice recipe if using a full chicken or if you simply like rice!)
Place rice mix in 9x13 pan and arrange chicken over the rice.
Bake 90 minutes at 350 degrees (TIP - reduce heat to 325 if using non-stick pan)
Tuna Noodle Casserole - Kathy Correll (from her mom)
Cook 1/2 package of noodles as directed and drain well. While noodles cook, melt 1 1/2 - 2 cups of cubed box cheese in 1/4 cup milk over low heat while stirring constantly
Add 1 can Cream of Mushroom soup, 1 can Tuna and the melted cheese mixture to the noodles. Mix thoroughly and place in a casserole baking dish
Bake at 350 degrees until hot (approximately 30 minutes or is bubbly)
TIP - add peas, carrots, or mushrooms (any or all three) per your preference
Grandma’s Crack - Mary Correll
Layer: 16oz unsalted peanuts, 16oz salted peanuts, 12 oz semi-sweet chocolate chips, 12oz milk chocolate chips, 20oz peanut butter chips, and 2 pounds of white almond bark (or vanilla candy coating) in a crockpot (starting with the peanuts). Turn pot on low for 2 hours then stir and let sit for 30 minutes. Stir again and the spoon mix onto wax paper or foil. Let cool and harden for 1 hour. Crack (break) up into smaller pieces. Enjoy!
Zucchini Bread - Flo Koning
Sift together 3 cups flour, 1 tsp salt, 1 tsp baking soda, 3 tsp cinnamon, 1/4 tsp baking powder, and a little ginger and nutmeg.
Mix together 3 beaten eggs, 2 cups sugar, 3 tsp vanilla and 1 cup oil. Add to previously sifted ingredients.
Stir in 3 cups grated (not peeled) zucchini and 1 cup chopped walnuts.
Pour mixture into 2 pans and bake for 1 hour at 350 degrees.
Pistachio Salad - Dennis Correll (OK, someone else should get credit, but I love it and is usually my contribution to big family dinners)
Mix together one package Instant Pistachio Pudding, one large can crushed pineapple (don’t drain)
Add 1 1/2 cup of miniature marshmallows and one 9 ounce container of Cool Whip.
Mix until well blended and chill in refrigerator before serving
TIP - Make a double batch - it goes fast especially with small kids. Also for variation, make with a large can of mixed fruit or with flavored marshmallows
Ollie Kuckten (Oliebollen - Dutch Doughnuts) - Jennie Koning
Dissolve 2 packages dry yeast in 3 cups of warm water. Add 1/4 cup shortening, 4 beaten eggs, 1 cup sugar, 1 cup currants, 1 TSP salt, 1/2 cup nutmeg and 6-7 cups flour and mix into a stiff dough. Let raise until approximately double in size. Drop tablespoon size dough scoops into hot oil and cook until darkened firm exterior. Remove and let cool slightly then shake doughnuts in a paper bag of cinnamon and sugar.
Raw Apple Cake - Millie Correll
Mix 1 cup sugar, 1/2 cup butter, 1 egg, 1 1/2 cup flour, 1 tsp baking soda, 1 tsp cinnamon, and 1/2 cup strong brewed coffee. When thoroughly mixed, add 2 cups raw peeled and sliced apples and mix again. Put batter in baking pan and sprinkle with sugar and nuts. Bake at 350 degrees for 30-35 minutes.
